Marc has put together a great collection of software for Mac OS X. Mostly for the developer, his collection in includes PHP 4 and PHP 5, Postgresql and a bunch of other add ons. Most notably his now famous PHP5 disk image installer is being worked on for Leopard and can be found as a tarball in Marc’s forums.

Just a quick note, I have installed the tarball on my MBP using Leopard and it works great! Apples own default PHP5 was just too bare bones for me to find it useful. Hopefully Apple will change this soon.
